Traditional Recipe for Red Wine Jelly

Ingredients

  • 1 bottle (750 ml) of good quality red wine (preferably full-bodied like Cabernet Sauvignon or Merlot)
     

  • 200 grams (1 cup) of granulated sugar
     

  • 4-6 gelatin sheets or 2 tablespoons powdered gelatin
     

  • Optional: spices such as cinnamon, cloves, or star anise for added warmth
     

  • Fresh fruit for garnish (optional)
     

Preparation Steps

  1. Soften the Gelatin: If using gelatin sheets, soak them in cold water for about 5 minutes until soft. For powdered gelatin, sprinkle it over a small amount of cold water and let it bloom.
     

  2. Heat the Wine and Sugar: Pour the red wine into a saucepan, add sugar, and gently heat over medium-low heat, stirring until the sugar dissolves completely. Avoid boiling, as high heat can reduce the wine’s flavor.
     

  3. Add Spices (Optional): To infuse the jelly with warm notes, add spices such as cinnamon sticks, cloves, or star anise while heating. Let simmer gently for 10 minutes, then strain to remove spices.
     

  4. Incorporate Gelatin: Remove the pan from heat and stir in the softened gelatin until completely dissolved.
     

  5. Pour into Molds: Pour the mixture into prepared molds or serving dishes.
     

  6. Chill and Set: Refrigerate for at least 4 hours or overnight until fully set.
